I tested Easy Install Method on both VMware Workstation 11 and VMware Player 7, the install of the system went fine and i was able to log in after the install rebooted. VMware Tools failed to automatically install after logging in initially (that's a VMware issue that is why I did not report a bug) but worked fine when manually installing VMware Tools.
Specs:
VMware Workstation 11.0.0 build-2305329 / VMware Player 7.0.0 build-2305329
Windows 8.1 Enterprise, 64-bit (Build 9600) 6.3.9600
Intel i7 3770
16GB Ram
OCZ Vector 150 SSD

I ran it in both BIOS and EFI mode. BIOS mode the easy install was normal did everything by itself, but when installing in EFI mode the EFI menu loads and you have to select install Ubuntu and manually do the rest of this install. It installed fine and booted fine in EFI after doing so.
