All went ok, there's just a little bug in Ubuntu Software Center. Tested on real hardware using an USB live image.

Live session Start/Finish tested OK. Minor Ubiquity window glitch (seems fixed).
Tested persistence and worked even better than expected. Remembered updates from install, localization and files created.
